VINIFICATION

The grapes, exclusively of the Alvarinho variety, are harvested by hand in small boxes and transported to the winery in a short space of time.
After pressing, the obtained must decants for 48 hours, followed by fermentation at a controlled temperature. Fermentation essentially takes place in stainless steel (around 15% of the total volume is fermented in used oak casks), with the fine lees remaining until the beginning of May, when bottling takes place. In this harvest, we also included Alvarinho in the blend, which was aged in large oak barrels.
