VINIFICATION
In our winery, with the most modern technology and total temperature control, we removed bunches that were not in perfect condition, completely destemmed them, gently crushed them and heat shocked them, followed by a period of cold pre-fermentation maceration in a wine press for around 12 to 24 hours, after which the masses were transferred to wide, low fermentation vats.
Maceration for 8 days at 22aC.
