VINIFICATION
The grapes are picked by hand, carefully sorted on the sorting mat and destemmed before entering the granite lagares. All the grapes are trodden in the lagares and fermented for 7 to 10 days at temperatures of 22oC to 27oC in the lagares. The wines are then transferred to new 225L French oak barrels of different characteristics, where malolactic fermentation takes place. The wine is aged for 20 months in the same French oak barrels. The final selection of barrels and the composition of the blend takes place around a month before bottling.
