VINIFICATION

The harvest begins in the first days of August to find grapes with high acidity and low sugar content. Harvested by hand, the grapes are crushed directly for the pneumatic press, in a reductive and temperature-controlled environment. The first fermentation takes place on fine lees and “bâtomage”.
