VINIFICATION
The harvest took place in perfect weather conditions on August 19th. The grapes were duly selected and destemmed and pressed in a pneumatic press. Fermentation took place in 9% new French oak barrels for 6 weeks at low temperatures and aged in the same barrels for 9 months with “battonage”.
